Sweet and Delicious Strawberry, White Chocolate and Lemon Muffins

Strawberries are steadily coming down in price, which is great because I love berries. My first steps were made toward my mother, who was holding out a strawberry to entice me. It worked!

Muffins are a great way to whip up a sweet treat. There’s no need to cream your butter and sugar – simply combine the dry ingredients with the wet ingredients. But be careful not to overmix the batter – you don’t want a tough muffin!

While the strawberries are a healthy choice, the addition of white chocolate makes these muffins a little bit naughty – but oh so sweet and delicious. The lemon zest also lifts and lightens the flavours.

Show me a kid who doesn’t like meatballs, and I’ll give up chocolate or pineapple juice, or even both! Well, maybe I won’t go that far, but I’ll definitely be surprised.

Meatballs are perfect for kids – small, bite-sized and tasty. They are also perfect for entertaining. These are full of flavour, but still ok for kids. If you prefer a little more heat, feel free to add a finely chopped chilli to the mixture. They also have the added bonus of being baked rather than fried.

Easy Sugar Cookies in 4 Steps

I love this recipe. It tastes great, is perfect for cutout biscuits, and is really simple.

I’ve used it countless times, and each time it has worked perfectly. On this occasion, I was making biscuits for my boy’s birthday party. Their birthdays are a day apart, so it looks like they’ll be sharing their birthday parties each year!

My eldest son just loves using the rolling pin, cutting out the shapes, and eating the dough scraps when he thinks I’m not watching!

Want to make a Super-Quick Apricot Pudding?

I always have a tin of fruit in my pantry. Whether it’s canned peaches, pears or apricots, I always have one up the back of my cupboard.

I find they are great for quick desserts that the kids just love – plain, straight out of the can served with custard or yoghurt. Or, if you have a spare 5 minutes before you serve dinner, you could whip up this pudding. It can bake away in the oven whilst you enjoy your dinner.
