Easy Homemade Churros… You Won’t Be Able To Stop At One!!

Churros are a Mexican style fritter – a bit like a long doughnut (mmmm, donuts). My first encounter with churros was in Disneyland when I was a teenager. We were on a family overseas holiday touring around LA, San Francisco, Las Vegas, San Diego, Mexico and Hawaii.

My brother-in-law bought a churros from one of the Disney street vendors. It was extra extra long, so we all had a piece. It was delicious. We really were in the happiest place on earth!

I’ve tried to recreate the recipe here. They are much smaller in size, but are a great bite size snack. I dare you to try stopping at one.

Easter Cookies In 4 Easy Steps

I always love to bake for Easter. Here is one of my favourite recipes that I like to whipped up…. a batch of my easy sugar cookies – with a twist.

These sugar cookies are already decorated! I’ve incorporated soft sprinkles into the cookie dough before rolling it out and cutting it into Easter shapes. The effect means that they look like they are already decorated with pastel coloured spots.

Quick, Easy And Super-Moist Mulberry Yoghurt Cake

It’s that time of the year again…. mulberry time. Yet again my mother’s mulberry tree is laden with mulberry fruit.

My boys and I dropped in to visit my parents last week and also saw my aunty who was also visiting. We had lots of fun picking mulberries together and boy, did our fingers get red!

This cake is quick, easy and super moist. When you take a bite it’s almost as if the mulberries are a hit of jam in the cake – simply delicious.

This recipe can also be tweaked if you don’t have some of the ingredients on hand. For example: the plump, juicy mulberries could be substituted for raspberries (mmm – imagine a raspberry yoghurt cake!) or blackberries. Likewise, if you don’t have greek yoghurt at home, use flavoured yoghurt instead. The coconut oil could also be substituted for vegetable oil. Any alterations will change the flavour of the cake, but it will still be delicious.

Mouth-Watering Apple Strudel That’s Low In Sugar

A dessert that isn’t too high in sugar content and my boys love (well, who doesn’t love dessert really?!)

My eldest helped me make this, and even took along some pictures and the recipe to his daycare for news day. His daycare was so great that they even made this with his classmates a few days later. All the kids got to help cut up the apples, smell the cinnamon and taste the apple mixture before it was baked. And dessert at daycare that day was….. apple strudel.

My kids love helping out in the kitchen. That they love the finished product is even better 🙂

Heavenly White Chocolate and Strawberry Tart Full of Taste and Nutrients

I was at my local supermarket the other day and I got a nice surprise. As soon as I entered the store I saw strawberries on display – for only 50 cents a punnet. That’s bargain prices!

Of course I stocked my trolley with a few punnets. But I also wonder about the farmer who grew these strawberries, and how much the supermarket has paid the farmer for the strawberries? Supermarkets have a history of undercutting producers….

I love strawberries – they are simply delicious and so good for you. Packed full of vitamin C, fibre and antioxidants, they are nutrient dense and also low in natural sugars.

When I got home, I just had to make something with strawberries in it. This is how this White Chocolate and Strawberry Tart recipe came about:
