We have had big celebrations in our house lately. My youngest son turned 2, and my eldest son turned 4 (all within a day of each other). It’s an exciting time of year for 2 little boys.

I had been busy preparing for their joint birthday party and hadn’t really had time to think about birthday cakes for the actual birthDAY of my eldest. We also had both sets of Grandparents coming over for dinner, so I wanted something that would double as a dessert. It needed to be an easy recipe. What better than cheesecake? Unbelievably Tangy Lemon Passionfruit Slice Recipe

I have been meaning to post this slice for a few weeks now but my SD card reader broke , so I was unable to access the image files on my camera card. Thankfully I now have a new one (thanks Ebay!), so I can get back to posting.

This slice recipe has a lovely tang from the lemon and the passionfruit. I used lemonade lemons from my parent’s tree, but ordinary lemons will work just as great in this recipe.

These Strawberry Easter Carrots are simple and delicious. I found a similar idea on Pinterest (soo many ideas on there!) that suggests using candy melts. I think white chocolate is probably tastier. You do need to ensure you use an oil based food colouring for this – I use Creative brand stocked at my local cake decorating shop. Water based food colouring will make the chocolate seize and harden.

Flavoursome Gluten-Free Berry Tarts

Gluten-Free – the 2 words fill my husband with fear. But gluten free doesn’t have to mean flavour free!

To be honest, gluten has little effect on the flavour, but a big effect on texture. The use of almond meal instead of traditional wheat flour makes these tarts a little more dense but also more moist. These tarts are deceptively simple but taste oh so summery with the inclusion of berries. Blueberries and Raspberries are perfect for this tart recipe.

Irresistible Passionfruit Yoghurt Cheesecake

I love checking out delis – the cured meats, and local and imported products are sometimes irresistible.

I was at the fruit market yesterday when I noticed something special in the chiller section. Barambah Organic Natural Yoghurt is heavenly. It was recommended by a fellow foodie whose blog I love. Check her out here. Because this yoghurt isn’t homogenised, it still has the layer of cream on the top. It reminds me of when I was younger, and the milkman used to deliver the bottles of milk every morning. They, too, had a layer of cream on the top underneath the foil lid. We used to have to be quick to bring the bottles in, in the morning, to beat the magpies who used to peck a hole in the top of the foil!

I had some passionfruit in the fridge that I needed to use, so I decided to incorporate the passionfruit and the natural yoghurt in a baked cheesecake.

This cheesecake also has a light topping. It’s inspired by a cheesecake made by a colleague of my husband. She made a cheesecake and took it to work one day – my husband has been raving about it ever since! Here’s her recipe.
