I have been meaning to post this slice for a few weeks now but my SD card reader broke , so I was unable to access the image files on my camera card. Thankfully I now have a new one (thanks Ebay!), so I can get back to posting.
This slice recipe has a lovely tang from the lemon and the passionfruit. I used lemonade lemons from my parent’s tree, but ordinary lemons will work just as great in this recipe.
Lemon Passionfruit Slice Recipe:
- 125 gram Butter, melted
- 1 cup Self Raising Flour
- 1/2 cup Caster Sugar
- 1 cup Desiccated Coconut
- 400 gram tin Condensed Milk
- 1 Egg
- 1 Egg Yolk
- 1 Tbsp Grated Lemon Rind
- 1/2 cup Lemon Juice
- 1/3 cup Passionfruit Pulp
- 2 Tbsp Plain Flour
- 1 tsp Baking powder
Method (4 steps)
Preheat the oven to 170 degrees Celsius or 340 degrees Fahrenheit.. Line a slice pan with baking paper.
In a medium bowl combine the self raising flour, sugar, coconut and melted butter. Mix then press evenly into the slice pan. Bake in the oven for 15 minutes.
While the base is cooking prepare the top layer of the slice. Combine all the remaining ingredients in a bowl and mix thoroughly. When the base is ready, remove from the oven and pour over the top layer. Return to the oven to cook for a further 25 minutes.
Remove from oven and cool completely before slicing.
