Create a Moreish Cranberry Spice Slice in No-Time

It was American Independence Day yesterday, and I was thinking about  foods that were typically North American. Cranberries immediately came to mind. They are one of the few fruits that are native to North America.

Cranberries are a fabulous source of Vitamin C and fibre. They are full of antioxidants and do a great job of protecting our cardiovascular system. They taste slightly tart, so are perfect for sweet cakes, muffins and slices. This slice recipe pairs dried cranberries with apple and cinnamon to create a moreish slice that is perfect for a school lunchbox. It also freezes well.

This recipe is also great for young helpers. There’s no electric mixers involved, so they can get mixing with a wooden spoon, just like my eldest son did today.

Cranberry Spice Slice Recipe

  • 1 Egg
  • 80 grams Butter, softened
  • 1/2 cup Brown Sugar
  • 1/2 cup Caster Sugar
  • 1/4 cup Sour Cream
  • 1 tsp Vanilla Essence
  • 3/4 cup Dried Cranberries
  • 1 medium Granny Smith apple, peeled and diced.
  • 1 cup Plain Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Ground Cinnamon
  • pinch of Salt

3 steps to make the recipe

  1. Preheat the oven to 170 degrees C / 340 degrees F. Grease a 27cm x 18cm slice pan and line it with baking paper.
  2. Beat the egg, butter and sugars together until smooth. Add the sour cream and vanilla, then beat well. Stir in the cranberries and apple.
  3. Sift the flour, baking powder and cinnamon into the slice mixture and stir well. Spread the mixture evenly in the slice pan, then sprinkle over cinnamon sugar.

Cinnamon Sugar Recipe

  • 1 Tbsp Caster Sugar
  • 1/2 tsp Ground Cinnamon

3 steps to make the cinnamon sugar

  1. Stir together sugar and cinnamon in a small bowl. Sprinkle over the batter in the pan.
  2. Bake for approx 30 mins or until a skewer inserted in the centre comes out clean.
  3. Cool in the slice pan before cutting into squares.
