This 4 Step Raspberry Baked Cheesecake Recipe Is Exquisit

We have had big celebrations in our house lately. My youngest son turned 2, and my eldest son turned 4 (all within a day of each other). It’s an exciting time of year for 2 little boys.

I had been busy preparing for their joint birthday party and hadn’t really had time to think about birthday cakes for the actual birthDAY of my eldest. We also had both sets of Grandparents coming over for dinner, so I wanted something that would double as a dessert. It needed to be an easy recipe. What better than cheesecake? Mr 4 loves raspberries, so there was no question over what flavour it would be. Here is the raspberry cheesecake recipe I used.

Irresistible Passionfruit Yoghurt Cheesecake

I love checking out delis – the cured meats, and local and imported products are sometimes irresistible.

I was at the fruit market yesterday when I noticed something special in the chiller section. Barambah Organic Natural Yoghurt is heavenly. It was recommended by a fellow foodie whose blog I love. Check her out here. Because this yoghurt isn’t homogenised, it still has the layer of cream on the top. It reminds me of when I was younger, and the milkman used to deliver the bottles of milk every morning. They, too, had a layer of cream on the top underneath the foil lid. We used to have to be quick to bring the bottles in, in the morning, to beat the magpies who used to peck a hole in the top of the foil!

I had some passionfruit in the fridge that I needed to use, so I decided to incorporate the passionfruit and the natural yoghurt in a baked cheesecake.

This cheesecake also has a light topping. It’s inspired by a cheesecake made by a colleague of my husband. She made a cheesecake and took it to work one day – my husband has been raving about it ever since! Here’s her recipe.

The Perfect Home-Made Pizza

The perfect homemade pizza base recipe. Get the kids involved, get messy and have fun kneading.

My husband’s standby takeaway meal is pizza. He loves it, and is a member of several local pizza joints. Me? I like pizza too, but we have differing tastes. He and my son love classic Hawaiian (ham and pineapple) pizzas. I like vegetarian toppings, and more gourmet pizza flavours. But there’s one thing we agree on – the PIZZA BASE.

Pizza bases can’t be too thick, or paper thin. Pizza bases need to have a bit of body to hold the sauce and the delicious ingredients. “But I can buy a pre-made pizza base from the local supermarket” I hear you say. This is true, but this pizza base recipe doesn’t taste like cardboard, is much cheaper and you can get the kids involved!

So let’s get started 🙂
