3 Step Mulberry and Lemon Muffins Recipe

Muffins are super easy and super fast. No need for beaters or electric mixers. All you need is a bowl and spoon.

Mulberries are not easily found on supermarket shelves. They look similar to a blackberry, but longer in length. Once they have ripened to a dark black berry and have been picked, they don’t keep for too long. It’s best to use them up straight away – that’s if you haven’t eaten them all whilst picking them and have a dark stain on your mouth and fingers! Mulberry leaves are also the favoured food of silkworms. So if your kids bring silkworms home from school, you had better find a mulberry tree to supply you with the leaves!

Muffins don’t usually have icing on them. I’ve broken from tradition and included a cream cheese frosting (which does use a mixer) on these muffins, so I guess they’re a cross between cupcakes and muffins. If you don’t want to include the frosting, they are just as yummy without.

Heavenly Vanilla Cupcakes Topped with Buttercream Icing

What’s not to love about cupcakes? They’re a little piece of heaven in your hand. A delicate cake topped with sweet buttercream, ganache or fresh cream.

Growing up in my family home they were never known as cupcakes – They were always patty cakes and my mother regularly cooked big batches for us. Most of the mixture would be cooked, ready to be iced when cooled. The remaining mixture would be incorporated with some mixed spice and dried fruit, to be baked and enjoyed by my father (who doesn’t really like icing!)

Cupcakes are a perfect addition to an afternoon tea party, a sweet treat in a child’s lunchbox, or a great portion controlled birthday cake. These ones were baked for my husband’s grandmother’s 91st birthday morning tea. The extended family was getting together to celebrate with her and I knew the delicate pink buttercream would be a perfect addition to the morning tea. Unfortunately my eldest son wasn’t well, so I stayed home with him while hubby took our youngest son along. Our little one worked the room like a pro, giving cuddles and smiles to everyone!

A moist chocolate cake recipe that doesn’t use butter? It’s yours for the making…

I still have plenty of beetroot growing in my garden, but I’m not complaining. It’s delicious and nutritious – even in cake! I’ve been meaning to try a chocolate and beetroot cake recipe for some time now. And I’m mighty glad I did. The grated beetroot adds moisture and some sweetness to the cake, and the kids don’t even notice that it’s in there.

I’ve added a chocolate icing to my cake, but another idea is to think of this cake as a Red Velvet style cake ( with all natural red colouring!) and use cream cheese frosting.
