Quick, Easy And Super-Moist Mulberry Yoghurt Cake

It’s that time of the year again…. mulberry time. Yet again my mother’s mulberry tree is laden with mulberry fruit.

My boys and I dropped in to visit my parents last week and also saw my aunty who was also visiting. We had lots of fun picking mulberries together and boy, did our fingers get red!

This cake is quick, easy and super moist. When you take a bite it’s almost as if the mulberries are a hit of jam in the cake – simply delicious.

This recipe can also be tweaked if you don’t have some of the ingredients on hand. For example: the plump, juicy mulberries could be substituted for raspberries (mmm – imagine a raspberry yoghurt cake!) or blackberries. Likewise, if you don’t have greek yoghurt at home, use flavoured yoghurt instead. The coconut oil could also be substituted for vegetable oil. Any alterations will change the flavour of the cake, but it will still be delicious.

Delightfully-Rich Chocolate Mulberry Brownies

So many mulberries, so little time to use them up before the season finishes!

Here’s a chocolate mulberry brownies recipe to enjoy. These taste rich and delicious – mainly because of the use of dutch cocoa powder instead of regular bournville cocoa. I’ve only recently gotten into dutch cocoa. Soo delicious and it just takes your chocolate cakes to a whole new level. Hmmmm…. brownies!

Scrumptious Mulberry and Almond Slice That’s Sugar Free

It’s that time of year again – Mulberry time! And what better way to try them out than by cooking them up in a slice recipe!

Yet again my Mum’s Mulberry tree is heavily laden with the rich black berries. The tree is huge, and people from all over her neighbourhood come to taste test. They eat them straight from the tree, and also fill up small containers with the mulberries to take home to enjoy. I’ve been lucky enough to share the picking experience with my 2 boys this year – Red hand alert! My youngest also had a bright red mouth to match his hands 🙂

3 Step Mulberry and Lemon Muffins Recipe

Muffins are super easy and super fast. No need for beaters or electric mixers. All you need is a bowl and spoon.

Mulberries are not easily found on supermarket shelves. They look similar to a blackberry, but longer in length. Once they have ripened to a dark black berry and have been picked, they don’t keep for too long. It’s best to use them up straight away – that’s if you haven’t eaten them all whilst picking them and have a dark stain on your mouth and fingers! Mulberry leaves are also the favoured food of silkworms. So if your kids bring silkworms home from school, you had better find a mulberry tree to supply you with the leaves!

Muffins don’t usually have icing on them. I’ve broken from tradition and included a cream cheese frosting (which does use a mixer) on these muffins, so I guess they’re a cross between cupcakes and muffins. If you don’t want to include the frosting, they are just as yummy without.
