I have been meaning to post this slice for a few weeks now but my SD card reader broke , so I was unable to access the image files on my camera card. Thankfully I now have a new one (thanks Ebay!), so I can get back to posting.

Pears are at their peak in the fall (autumn). I think they are often overlooked for their friend, the apple. In fact, they are a great substitute for apples in crumbles, cakes and desserts. This slice is sweet, moist and very moreish. Yum
It was American Independence Day yesterday, and I was thinking about foods that were typically North American. Cranberries immediately came to mind. They are one of the few fruits that are native to North America.
Cranberries are a fabulous source of Vitamin C and fibre. They are full of antioxidants and do a great job of protecting our cardiovascular system. They taste slightly tart, so are perfect for sweet cakes, muffins and slices. This slice recipe pairs dried cranberries with apple and cinnamon to create a moreish slice that is perfect for a school lunchbox. It also freezes well.
Fast and Easy – two of my favourite words when it comes to baking slices. Don’t get me wrong – I love spending time in my kitchen, it’s just that sometimes it’s best to be in and out in a jiffy when there are small children about.

This easy slice recipe uses two of my favourite items: Berries and Coconut. They really are a classic pairing in a cake slice. If you don’t have raspberries on hand, feel free to substitute them with other berries – strawberries or blueberries would taste just as great.
