This White Chocolate and Coconut Truffles Recipe Is Super-EASY

Christmas is coming… The decorations and Christmas trees have been in the shopping centres for months now.

My two sons are getting increasingly more excited. Yesterday we put the Christmas Tree up – exciting times for a 4 year old and a 2 year old. 🙂 They also opened the first drawer on our Advent Calendar.
For me, Christmas is also a time  for catching up with family and friends – and to make lots of sweet treats to share with them. What’s not to love about the combination of coconut and white chocolate? This truffles recipe is very easy to make – you’ll be sure to impress with them. Don’t leave out the lemon rind – it really ties the flavours in nicely.

Heavenly White Chocolate and Strawberry Tart Full of Taste and Nutrients

I was at my local supermarket the other day and I got a nice surprise. As soon as I entered the store I saw strawberries on display – for only 50 cents a punnet. That’s bargain prices!

Of course I stocked my trolley with a few punnets. But I also wonder about the farmer who grew these strawberries, and how much the supermarket has paid the farmer for the strawberries? Supermarkets have a history of undercutting producers….

When I got home, I just had to make something with strawberries in it. This is how this White Chocolate and Strawberry Tart recipe came about:

Unbelievably Tangy Lemon Passionfruit Slice Recipe

I have been meaning to post this slice for a few weeks now but my SD card reader broke , so I was unable to access the image files on my camera card. Thankfully I now have a new one (thanks Ebay!), so I can get back to posting.

Orange Chocolate Drizzle Cookies That Melt In Your Mouth

Our orange tree is laden with fruit again, so I’m finding ways to use up all the delicious fruit before the cockatoos eat them all.

We have 4 dogs at our house at the moment (we are dog-sitting 2 dogs, as well as having 2 dogs of our own), and they have been chasing the cockatoos!  Thanks to this extra protection, there are plenty of oranges on our orange tree at the moment.

These cookies are delicious. The combination of chocolate and orange in a cookie is always a winner, and the soft biscuits just melt in your mouth!

Tasty Roast Vegetable and Quinoa Salad Recipe with Orange Balsamic Dressing

What is Quinoa? It has been touted as a superfood, so what exactly makes it so super?

Quinoa looks like a grain, but it is actually a seed. It is often called a grain because it is used and cooked like one. Originally grown in the Andes, it has the positive points of being high in protein, iron and fibre. Quinoa is a great low GI seed, which makes it perfect for diabetics. The United Nations have even named 2013 the International Year of Quinoa because they see the exceptional nutritional value of the seed, and its potential to contribute in the fight against malnutrition and hunger around the world.

Quinoa has a mild, slightly nutty texture which is a little like couscous. It can be used in salads, cooked and shaped into patties, used as a substitute for pasta or rice, and even used for thickening up soups. Try Quinoa yourself with this tasty recipe 🙂
